Ryan was raised in Crowley, La. He grew up in his family’s restaurant, and that is where he sparked his passion for cooking. He attended the University of Louisiana at Lafayette and graduated in 2012 with a Bachelor’s in General Studies. In 2013, Ryan co-founded and created a new & youthful breakfast restaurant with the widely successful regional chain Brick & Spoon. Ryan left Brick & Spoon in June 2014 in order to open a sustainably sourced, community restaurant concept. He is now the Chef/Proprietor of Restaurant Dark Roux. He works side by side with his team to bring the community a fresh new locally and regionally inspired Southern cuisine.

My name is Aaron Brinkman, and I am the General Manager at Dark Roux. I come from the town Laplace, Louisiana. I am currently a senior at the University of Louisiana at Lafayette studying Management in the College of Business Administration. In my free time I enjoy reading, biking, and golfing. Working for Dark Roux has been an amazing experience! It has taught me so much about the importance of nutritional value of food, supporting local businesses, and a deeper appreciation and passion for sharing and serving the people of Lafayette and the visitors from all over our delicious, healthy, local food and southern hospitality. The Dark Roux staff is filled with awesome people, creating a fun and memorable dining experience for everyone!

Sullivan Zant is from Jennings, Louisiana. He graduated from Jennings High School in 2011 and then attended ULL for the next two years on scholarship majoring in secondary English Education. While attending college, Sullivan started his first job at Coyote Blues and quickly worked his way up through the ranks. In June of 2014 he started as a line cook at Brick & Spoon for Chef Ryan Trahan. He is currently sous chef and is honored to work with such an incredibly gifted set of individuals. He one day aspires to change the way that food and drink bring happiness and joy to people here in Acadiana.

Paige Tait was born and spent most of her childhood in Los Angeles, California raised by an artist and a set decorator. She moved to Portland, Oregon at fifteen determined to become a doctor, with special interest in hospice. Paige graduated from Portland State University with a Bachelors degree in Psychology and Biology. While working as a boutique hotel manager, server and bartender during college, she discovered her love for the service industry. This field allowed her to make genuine human connections and a creative outlet, which can be the best medicine.

Paige moved to Lafayette, LA inspired to explore another part of the country and embrace a new culture. She became immersed in the craft cocktail world and uses her experiences to cultivate new cocktails. Her genuine love for customer service, cocktail history, and fresh ingredients play a large role in the cocktails she creates for Dark Roux. When she isn't shaking a drink, you will probably find her hanging with her puppies, with a nice glass of whiskey in hand.
